"This paper proposes a research project examining culinary trends in the U.S. in the last decade. It often seems that tastes among the general public vary greatly from year to year, and what was in fashion one day may be passe the next. Today's trendy tea house can be tomorrow's Starbucks--still frequented by its devotees, but no longer considered "hip." The public can be fickle in its culinary desires, and it is up to the chefs and restaurants and hotels of the nation to keep on top of those trends in order to better serve their hungry customers. By exploring culinary trends from the past decade in the U.S., a better picture can be drawn of the patterns of those trends, and enable researchers to better predict future culinary trends before they become popular.
"Culinary trends often differ from coast to coast, as well. What is hot in New York City may not be what customers are clamoring for in San Francisco at any given moment. This project aims to take those regional differences into account and discover the causes of those differences."
